Preheat the oven to 350°F degrees.

Line a 12-cup muffin tray with parchment liners.

In a large mixing bowl, add mashed banana, oil, eggs, vanilla, sugar, and sourdough discard until well combined.

Sift in flour, baking powder, baking soda, salt, and oats.

Mix until the batter just comes together, but do not over mix.
