Preheat the oven to 375°F degrees. Lightly grease two baking sheets and set aside.

Roll out prepared pie dough to ¼-inch thick and slice dough into 8 5-inch rounds.

Transfer the dough rounds to the baking sheets and refrigerate while preparing the filling.

For the filling, toss together mixed berries, granulated sugar, cornstarch, lemon juice and zest, vanilla extract, and salt until well combined.

Brush the edges of each dough round with egg wash and add a spoonful of filling to the center.

Carefully fold the dough in half to create a crescent shape and press down to seal.

Use a fork to crimp the edges and trim off any excess dough.

Brush the tops with egg wash and bake until golden, about 20 to 25 minutes.

Finish with a drizzle of glaze and a sprinkle of coarse sugar, or add the coarse sugar before baking if not glazing.
