In a medium mixing bowl, beat together ½ cup sugar, melted butter, eggs, lemon juice, lemon zest, and vanilla until well combined.

In a separate small mixing bowl, whisk together the remaining ½ cup sugar, cornstarch, and lemon juice.

Slowly pour in the hot water while whisking, then pour this mixture over the cake batter without stirring it in.

Bake for 30 minutes, until the edges have set but the center has a slight jiggle.
