Ingredients
- 4 cups mixed fresh berries (blueberries, blackberries, raspberries, strawberries)
- ⅓ cup granulated sugar
- 2 tablespoons Fleischmann’s Cornstarch
- 1 medium lemon (zested & juiced)
- 1 cup all-purpose flour
- ⅓ cup granulated sugar
- 1 teaspoon Fleischmann’s Baking Powder
- ¼ teaspoon salt
- ½ cup unsalted butter (cold & cubed)
- 3 tablespoons cream
Steps
- 1. Preheat the oven to 375°F degrees.
- 2. Lightly butter a 9-inch cast iron skillet.
- 3. In a large mixing bowl, toss together the berries, sugar, cornstarch, lemon zest, and lemon juice until combined.
- 4. Transfer the berry mixture to the prepared skillet and set aside.
- 5. In a medium mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- 6. Add the cold, cubed butter and work it into the dough until a crumbly mixture is formed.
- 7. Add the cream and mix until incorporated.
- 8. Evenly sprinkle the mixture over the berries.
- 9. Bake for 35 to 40 minutes, until the topping is golden and the fruit is bubbly.
- 10. Let cool to room temperature before serving.
Notes
This recipe can be made over an outdoor oven or barbecue tented with foil to prevent burning.
