Mixed Berry Cobbler

Ingredients

  • 4 cups mixed fresh berries (blueberries, blackberries, raspberries, strawberries)
  • ⅓ cup granulated sugar
  • 2 tablespoons Fleischmann’s Cornstarch
  • 1 medium lemon (zested & juiced)
  • 1 cup all-purpose flour
  • ⅓ cup granulated sugar
  • 1 teaspoon Fleischmann’s Baking Powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter (cold & cubed)
  • 3 tablespoons cream

Steps

  1. 1. Preheat the oven to 375°F degrees.
  2. 2. Lightly butter a 9-inch cast iron skillet.
  3. 3. In a large mixing bowl, toss together the berries, sugar, cornstarch, lemon zest, and lemon juice until combined.
  4. 4. Transfer the berry mixture to the prepared skillet and set aside.
  5. 5. In a medium mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  6. 6. Add the cold, cubed butter and work it into the dough until a crumbly mixture is formed.
  7. 7. Add the cream and mix until incorporated.
  8. 8. Evenly sprinkle the mixture over the berries.
  9. 9. Bake for 35 to 40 minutes, until the topping is golden and the fruit is bubbly.
  10. 10. Let cool to room temperature before serving.

Notes

This recipe can be made over an outdoor oven or barbecue tented with foil to prevent burning.
