Ingredients
- 3 ripe mashed bananas
- 1/2 cup neutral oil
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 3/4 cup granulated sugar
- 125 grams sourdough discard
- 1 1/2 cups all-purpose flour
- 2 teaspoons Fleischmann’s Baking Powder
- 1/4 teaspoon Fleischmann’s Baking Soda
- 3/4 teaspoon salt
- 1/2 cup whole oats
Steps
- 1. Preheat the oven to 350°F degrees.
- 2. Line a 12-cup muffin tray with parchment liners.
- 3. In a large mixing bowl, add mashed banana, oil, eggs, vanilla, sugar, and sourdough discard until well combined.
- 4. Sift in flour, baking powder, baking soda, salt, and oats.
- 5. Mix until the batter just comes together, but do not over mix.
- 6. Evenly divide batter amongst the prepared muffin tray.
- 7. Bake for 18 to 20 minutes, until the tops bounce back to touch.
