Sourdough Banana Oat Muffins

Ingredients

  • 3 ripe mashed bananas
  • 1/2 cup neutral oil
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 3/4 cup granulated sugar
  • 125 grams sourdough discard
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons Fleischmann’s Baking Powder
  • 1/4 teaspoon Fleischmann’s Baking Soda
  • 3/4 teaspoon salt
  • 1/2 cup whole oats

Steps

  1. 1. Preheat the oven to 350°F degrees.
  2. 2. Line a 12-cup muffin tray with parchment liners.
  3. 3. In a large mixing bowl, add mashed banana, oil, eggs, vanilla, sugar, and sourdough discard until well combined.
  4. 4. Sift in flour, baking powder, baking soda, salt, and oats.
  5. 5. Mix until the batter just comes together, but do not over mix.
  6. 6. Evenly divide batter amongst the prepared muffin tray.
  7. 7. Bake for 18 to 20 minutes, until the tops bounce back to touch.
