Ingredients
- 2 1/2 cups full-fat cottage cheese
- ½ cup full-fat greek yogurt
- ¾ cup granulated sugar
- 1 pinch salt
- 1/3 cup corn starch
- 2 teaspoons vanilla extract
- 5 large eggs
- Freshly sliced strawberries, for topping
Steps
- 1. Preheat the oven to 350°F degrees.
- 2. Line a 9-inch spring form pan or round cake pan with parchment paper.
- 3. Remove the liquid from the top of the cottage cheese before measuring.
- 4. To a food processor, add cottage cheese, yogurt, sugar, salt, cornstarch, vanilla extract, and eggs. Puree until silky smooth.
- 5. Transfer mixture to prepared pan and cover with foil.
- 6. Bake for 30 minutes, remove foil, and bake for an additional 20 to 30 minutes, until puffed and set.
- 7. Let cool to room temperature and refrigerate until ready to serve.
- 8. Finish with freshly sliced strawberries, slice, and serve.
