Cottage Cheese Cake

Ingredients

  • 2 1/2 cups full-fat cottage cheese
  • ½ cup full-fat greek yogurt
  • ¾ cup granulated sugar
  • 1 pinch salt
  • 1/3 cup corn starch
  • 2 teaspoons vanilla extract
  • 5 large eggs
  • Freshly sliced strawberries, for topping

Steps

  1. 1. Preheat the oven to 350°F degrees.
  2. 2. Line a 9-inch spring form pan or round cake pan with parchment paper.
  3. 3. Remove the liquid from the top of the cottage cheese before measuring.
  4. 4. To a food processor, add cottage cheese, yogurt, sugar, salt, cornstarch, vanilla extract, and eggs. Puree until silky smooth.
  5. 5. Transfer mixture to prepared pan and cover with foil.
  6. 6. Bake for 30 minutes, remove foil, and bake for an additional 20 to 30 minutes, until puffed and set.
  7. 7. Let cool to room temperature and refrigerate until ready to serve.
  8. 8. Finish with freshly sliced strawberries, slice, and serve.
